Avocado Baking: Sweet Treats 3 Ways

Hi everyone! For those of you who are new to my blog, take some time to browse around on my site and learn about some of my favorite topics: nutrition, fitness, and wellness. I'm a health fanatic with a kick for helping people like you live their happiest lives... and for me, that includes my lifelong hobby of *guilt-free* baking! (What can I say? My sweet tooth makes me more fun.)


So today I'm here to tell you about a life-altering discovery I've recently made in the world of "healthy-ish" baking: AVOCADOS! Not only are they a heart-healthy, nutrient-dense superfood, but they are now a kitchen staple of mine (well, more than they were before), and they make baked goods turn out oh-so-gooey. *Insert drool emoji.*


Using avocados in baking is actually not a new thing. The idea originally came about almost a decade ago to substitute avocados for butter to decrease the amount of saturated fat consumed in homemade recipes. (The 2015-2020 Dietary Guidelines for Americans recommends keeping saturated fat consumption to less than 10% of daily calories.) Instead, avocados contain monounsaturated fats, which help lower LDL ("bad") cholesterol, increase HDL ("good") cholesterol, and can also aid in the prevention of chronic diseases such as type 2 diabetes.


The creamy texture of avocados makes them perfect for not only baked goods, but anything that you would normally pair with butter, shortening, eggs, mayonnaise, or sour cream. Bonus: you can't taste them in the delicious recipes I'm about to share with you. Let's get to it!


Fudgy Avocado Brownies

Ingredients

  • 1 ripe avocado, mashed

  • 2 eggs (or flax eggs*)

  • 1/3 cup coconut sugar

  • 1/4 cup pure maple syrup (or honey)

  • 3 tbsp. coconut oil, melted

  • 1 tsp. vanilla extract

  • 1/2 cup unsweetened cocoa powder (I used dark cocoa, but you can also use regular or even cacao)

  • 1/2 cup almond flour

  • 1 tsp. baking soda

  • 1/4 tsp. salt

  • 1/2 cup chocolate chips (dairy-free if desired)

Instructions

  • With an electric mixer, combine the avocado, eggs, coconut sugar, maple syrup, oil and vanilla on medium speed. Process until smooth.

  • Gradually add in the almond flour, cocoa powder, baking soda, and salt.

  • Mix in most of the chocolate chips, leaving a few to sprinkle on top of the mixture.

  • Pour into a greased 8x8" baking pan and sprinkle remaining chocolate chips on top.

  • Bake at 350°F for 18-20 minutes.

Flourless Avocado Chocolatey Cookies

Ingredients

  • 1 ripe avocado, mashed

  • 1 egg (or flax egg*)

  • 1/2 cup all-natural nut butter (I used almond butter)

  • 1/3 cup agave syrup (can be substituted for 1/4 cup pure maple syrup or honey)

  • 1 tsp. vanilla extract

  • 3 tbsp. unsweetened cocoa powder

  • Dash of cinnamon

  • 1/4 cup chocolate chips (dairy-free if desired)

Instructions

  • Blend all ingredients (except chocolate chips) with a food processor or hand mixer on medium-high speed until smooth.

  • Fold in chocolate chips and drop in spoonfuls onto a prepared baking sheet (sprayed with olive oil cooking spray or covered with parchment paper).

  • Bake at 350°F for about 15 minutes.

Avocado Flourless Blondies

Ingredients

  • 1 ripe avocado, mashed

  • 1 ripe banana, mashed

  • 1/3 cup all-natural nut butter (I used almond butter)

  • 2 eggs (or flax eggs*)

  • 1 1/2 tbsp. coconut oil

  • 3 tbsp. honey (or pure maple syrup)

  • 1/4 tsp. cinnamon

  • 1/3 cup chocolate chips (dairy-free if desired)

Instructions

  • Blend all ingredients (except chocolate chips) with a food processor or hand mixer on medium-high speed until smooth.

  • Fold in chocolate chips and spread into a 9x13" prepared baking pan.

  • Bake at 350°F for 25-28 minutes. The final product should come out slightly gooey in texture.

*1 flax egg = 1 tbsp. flaxseed meal, mixed with 3 tbsp. water (let sit for 5 minutes before adding to mixture)


Enjoy any of these sweet treats with a cold brew coffee or matcha green tea latte! YUM.
