Fall Favorites: 5 Easy Healthy Recipes You Can Make Right Now

Wake up and smell the pumpkin - it's spooky season!

(Yes, I am that girl who waited in line at Starbucks when the Pumpkin Spice Latte came back. Can you even blame me?)

The only thing spooky about my fall favorites is if you don't try them. Especially #4; it's a family original. I hope these simple, healthy recipes make their way into your kitchen just in time for cuddle weather!

First up: Pumpkin Spice Protein - my post-workout version of the PSL.

If you follow me on Instagram then you've probably seen me go on rants about the importance of pre- and post-workout nutrition. This shake will help refuel your muscles after a hard gym sesh AND you'll get the benefits of pumpkin. *Make sure you are using pumpkin puree, not pumpkin pie filling, to get these benefits.* Pumpkins are loaded with antioxidants (which increase your immunity), fiber (hello fullness and healthy digestion), and vitamin A (for healthy eyesight).

Plus it tastes like pumpkin pie in a cup! Triple whammy.

Next up: Apple Cinnamon Oats.

This one seriously made me question why I never put apples in my morning oatmeal. I felt like I had apple pie for breakfast! (Clearly I'm a fan of pie.)

If you add the pecan topping (which I highly recommend) make sure you toast them with a some additional cinnamon. A little more cinnamon never hurts.

Never toasted pecans? Check out the next recipe.

I'm honestly not a big spinach salad person (I usually stuff a bunch of spinach in my protein shakes so I can't taste it), but I really could've eaten this whole salad. The mixture of toppings is so tasty you'll wonder how there's spinach in there!

LAZY GIRL HACK: You can also buy butternut squash already cubed and ready to steam in a bag. Dinner in 5? Yes, please!

I recommend serving this as a side to the following recipe.

This one actually is my mom's recipe and my FAVORITE fall favorite.

I started making this in college because it's so easy and healthy. Just throw the ingredients in a crock pot and voila! Top with some cracked black pepper and cheese (if your bod agrees with dairy) and you'll win the neighborhood football chili cook-off, I guarantee it.

Last but not least, we might as well finish with some classic pumpkin bread!

This one has just a little twist because it's made without any gluten or dairy (depending on the type of chocolate chips you use. I recommend Enjoy Life Foods for dairy-free).

What are some of your fall favorites? I'd love to know how these turned out for you! Get in touch with me via the contact tab above or follow me on social media (icons located at the bottom of this page).

A quick note on any recipe I post: I created it based on my dietary needs (i.e., almond milk instead of regular milk). You can always substitute with ingredients that work better for your body and health goals. Questions on how to determine this? I'm here to help!
